Today’s Message:

Hi everyone! Can you believe you are already on day four of the 14-Day Healthy YOU Challenge? You should be so proud of yourself for coming this far! Yesterday we focused on adding a serving or two of whole grains to our breakfast by choosing one of the sample breakfast meal plans provided. Today is all about vegetables! Before we get into today’s challenge let’s start today off with our two favorite questions:

  1. What is your Health Color today, right now? Red? Orange? Yellow? Green? Blue? Purple?
  2. What color do you want to be today?

Growing up, your mom always told you to eat your vegetables and she was right for many reasons! Both vegetables and fruits are rich in potassium, fiber, folate, vitamin C and beta carotene. Vitamin C and beta carotene are considered powerful antioxidants, natural substances in foods that clean up free radicals in your body.

  1. Eat a cup or two of vegetables at lunch! Open up your Healthy YOU Lunches meal plan sheet below and choose one of the seven sample lunches with a vegetable icon next to it.
  2. Begin logging your daily vegetable consumption on your Healthy YOU Tracking Sheet under Day 4.

Don’t forget to also continue logging your water and whole grains!
