Earthy Turkey Chia Chili (crockpot)

Ingredients
  • 1pound ground turkeyI like Plainville Farms
  • 1large onion, finely diced
  • 2 sweet bell peppers, finely diced
  • 215 oz. cans tomato sauce (no added sugar)
  • 215 oz. cans fire-roasted diced tomatoes
  • 115 oz. can dark red kidney beans, rinsed
  • 115 oz. can black beans, rinsed
  • 115 oz. can pinto beans, rinsed
  • 1/4cup chia seeds
  • 1tbsp. turmeric powder
  • 1 tbsp. cumin
  • 1tbsp. chili powder
  • 1/2tsp. cayenne pepper
  • Optional toppings: shredded cheese, plain, whole milk Greek or Icelandic yogurt, green onions, sliced olives
Instructions
  1. Brown turkey, onions and peppers in a large skillet with extra virgin olive oil.
  2. Place in the bottom of crockpot and layer with tomato sauce, diced tomatoes, beans, chia seeds, and spices. Stir well.
  3. Cook on low for 6 hours or on high for 4 hours. Stir occasionally. Serve with toppings of choice.
