Ingredients
  • 4cups Brussels sproutstrimmed and cut in half
  • 1large sweet potatounpeeled and cut into 1/2-inch slices and then quartered
  • 2cups cremini mushrooms, sliced in halfCremini mushrooms are sometimes called “baby bella” mushrooms
  • 1/4cup extra virgin olive oil
  • Sea salt to taste
  • 1/2tsp. ground pepper
  • 1 1/2tsp. ground turmeric
  • 1tsp. cumin
Instructions
  1. Preheat oven to 400 degrees. Wash and trim all vegetables and add to a large bowl.
  2. Drizzle with olive oil and add salt, pepper, and spices. Using a large spoon, stir vegetables to evenly coated with oil and spices.
  3. Spread in a single layer on baking sheet and bake for 30-40 minutes until tender. They should still have a slight crunch to them!
